“When dad’s away, mom doesn’t cook.”
That’s exactly how I felt today when I got home from work. Rhett has fever, I’m just exhausted, and who really wants to cook over a hot stove for thirty minutes when it’s 100+ degrees outside? [Not this wife/mom.]
With that being said, I made hot sandwiches for dinner. Super easy, and actually really delicious. It’s delicious because I have a little secret….. After you make your sandwich how you want it, heat the skillet up on medium-high with just a dab of olive oil. Once it’s nice & hot, spread some MAYO on the OUTSIDE of one slice of your bread. Plop it wet side down in the oil and let it sizzle! It literally takes 1-2 minutes per side. Before you flip, make sure you spread mayo on the upright side. Flip and let cook for another 1-2 minutes. It gives the bread a nice creamy crust! Super YUMMY and QUICK! This mom is done for the day! Signing out before 7pm and I foresee my bed before 9pm. Happy Tuesday readers!
[Sandwich pictured above features sliced pepper jack cheese, fresh deli sourdough bread, deli honey baked ham, and mayo on the inside and out. Easy as that!]
