|Weeknight Catalina Salad|

We just got back from vacation on Friday and my sweet husband had to leave yesterday to go out of town for a week for work. Bummer. With him being gone, it’s just Rhett and I to hold down the fort and I wanted to make this weeks dinners super easy!

Ingredients:

  • Cooked Ground beef
  • Tomatoes
  • Green onions
  • Red onion
  • Avocado
  • Frito chips
  • Shredded cheese
  • Iceberg lettuce
  • Catalina dressing

Recipe:

This literally can’t get any easier than what I’m about to tell you.

Chop all veggies and add to a large bowl of iceberg lettuce. Add cheese and chips. Mix all ingredients together.


(All ingredients can be mixed together but I like to keep this next part separate because if I have left overs they will not end up soggy)

Grab serving bowl and add single portion of veggie mix. Top with a few spoonfuls of ground beef and slap on the Catalina. Mix all together in the bowl and top with a few extra Fritos.
