This stuff can be topped on pretty much anything; ice cream, pancakes, cakes, waffles, toast… you name it!
- 1 lb strawberries (washed, hulled & sliced)
- 1/2 cup sugar
- 1 lemon
- Place sliced strawberries and sugar in small sauce pan.
- Zest lemon into pan with strawberries and sugar.
- Juice entire lemon into pan as well.
- Heat to boiling on medium high, stirring occasionally.
- Reduce heat to low and continue cooking and stirring for about 20 minutes.
- Pour mixture into mason jar and place in fridge until cool.
- Serve after it has cooled.
Tommy and I visit Branson often, and when I say often, I mean at least once every couple of years. It is one of my most favorite vacation spots. While we are there, we like to visit The Spice & Tea Exchange that is along the Branson Landing shopping strip. That’s exactly how I felt today when I got home from work. Rhett has fever, I’m just exhausted, and who really wants to cook over a hot stove for thirty minutes when it’s 100+ degrees outside? [Not this wife/mom.]
With that being said, I made hot sandwiches for dinner. Super easy, and actually really delicious. It’s delicious because I have a little secret….. After you make your sandwich how you want it, heat the skillet up on medium-high with just a dab of olive oil. Once it’s nice & hot, spread some MAYO on the OUTSIDE of one slice of your bread. Plop it wet side down in the oil and let it sizzle! It literally takes 1-2 minutes per side. Before you flip, make sure you spread mayo on the upright side. Flip and let cook for another 1-2 minutes. It gives the bread a nice creamy crust! Super YUMMY and QUICK! This mom is done for the day! Signing out before 7pm and I foresee my bed before 9pm. Happy Tuesday readers!

We just got back from vacation on Friday and my sweet husband had to leave yesterday to go out of town for a week for work. Bummer. With him being gone, it’s just Rhett and I to hold down the fort and I wanted to make this weeks dinners super easy!
